Enoki or enokitake is a long, slender, white mushroom. It is also known as enokidake, yuki-motase, snow puff mushroom, velvet shank, velvet stem, velvet foot, nametake and winter mushroom. In the scientific community, this mushroom is known as Flammulina velutipes.
